Dr. Oetker colour gels are more concentrated than liquid colours: they colour without making the mixture runny, which makes them handy for buttercream and sugarpaste. Pink suits birthday cakes, baby showers and cupcake frosting, from dusky pink to fuchsia depending on how much you add. Its colour comes from carmine.
How to use it: knead the tube, snip the end with scissors, then add the gel a little at a time, stirring well between each addition. For sugarpaste, knead well after each addition. According to Dr. Oetker's guide, one tube colours about three 18 cm sponges in a bright shade, or more than 12 in pastel, and about 18 cupcakes in bright, more than 100 in pastel.
