The History of the Marshmallow

A cult candy, the marshmallow and its spongy appearance is one of the best-selling candies in the world. If its origins date back to Antiquity, marshmallow was used above all for its medicinal properties. Indeed, this tree-like herb was very popular for curing sore throats. From the 19th century, confectioners changed the way marshmallows were consumed by replacing the marshmallow root with gelatin and egg whites. But it was not until 1948 that marshmallow paste was created by the American Alex Doumak. Very popular in Canada and the United States , marshmallow has become such an iconic treat that there is even a Marshmallow Day!
