Dr. Oetker colour gels are more concentrated than liquid colours: they colour without making the mixture runny, which makes them handy for buttercream and sugarpaste. Yellow is the base for rainbow cupcakes and lemon cakes, and mixes with blue for green or with red for orange. Its colour comes from curcumin.

How to use it: knead the tube, snip the end with scissors, then add the gel a little at a time, stirring well between each addition. For sugarpaste, knead well after each addition. According to Dr. Oetker's guide, one tube colours about three 18 cm sponges in a bright shade, or more than 12 in pastel, and about 18 cupcakes in bright, more than 100 in pastel.

The colours in the range can be mixed together to create new shades. Explore the full Dr. Oetker range at Pop's America.
