Pure maple syrup is obtained exclusively by concentrating the sap of the sugar maple tree (Acer saccharum). In the spring, when the nights remain frigid but the days are warming, the sap rises in the trees and can be harvested. It takes approximately 40 liters of sap to produce just one liter of syrup – this natural concentration explains the richness and intensity of the final product. The sap is boiled in evaporators until it reaches a sugar density of 66%, at which point it transforms into syrup.
