Founded in 1891, Dr. Oetker is one of the go-to names for home baking in the UK. Its Soft Fondant is made to stay pliable and easy to work with, even for a first decorated cake.

How to use it: knead the icing until soft, then roll it out to about 5 mm on a surface dusted with icing sugar. Brush the cake with a thin layer of apricot jam or buttercream, lift the icing over with the rolling pin, smooth it from the top down the sides and trim the excess. For a glossy finish, polish the surface with the palm of your hand. According to Dr. Oetker, one pack covers a 25 cm round cake or a 23 cm square cake.

White is easy to colour: add a little food colour gel or knead in a small amount of coloured fondant.
