The Ro-Tel story begins in 1943 in Elsa, Texas, in the Rio Grande Valley, when Carl Roettele and his wife Rosemary opened a small 6,000-square-foot cannery called the Elsa Canning Company. Of all the vegetables they canned—peas, beans, citrus fruits—their pride and joy was their blend of locally grown tomatoes and green peppers. Worried that no one would know how to pronounce or spell "Roettele," Carl simplified the name to RO*TEL , the asterisk symbolizing the Lone Star of Texas. The product quickly became a favorite among Texas celebrities and politicians. Initially distributed only as far as San Antonio, Houston, and Dallas, Ro-Tel reached Oklahoma and Arkansas in the mid-1950s. National recognition came in 1963 when Lady Bird Johnson , then Second Lady of the United States, revealed that Ro-Tel was her "secret ingredient" in her Pedernales Chili recipe published in the Washington Post. In 1949, the brand officially began positioning itself as an essential ingredient in queso. The current iconic red and green packaging dates from the early 1980s. Production moved out of Texas in the 1990s. After stints with International Home Foods and American Home Products, ConAgra Foods acquired the brand in 2000. In 2005, Ro-Tel and Velveeta officially became marketing partners. Today, Ro-Tel produces tens of millions of boxes annually and remains a staple of American Tex-Mex cuisine.
