The Ortega story begins in the 1800s in Ventura, California, where Mama Ortega (Maria Conception Jacinta Dominguez Ortega) raised her 13 children in a small adobe house, cooking memorable meals on a small coal stove. Her son, Emilio Carlos Ortega , the eleventh child, moved to New Mexico in 1890 and became fascinated by chiles and their flavors. He learned how to roast, peel, deseed, and wash chiles for preservation and packaging.
