This rub, made with sugar , brown sugar , paprika , sea salt , chili pepper , garlic , onion , mustard seeds , and celery seeds, creates an irresistible caramelized crust when slow-cooked.
On the palate, the flavor profile first reveals a sweetness characteristic of Carolina rubs, followed by smoky and spicy notes of paprika and chili pepper. Mustard seeds provide a light, typically Carolina zing, while celery adds a subtle herbaceous freshness. The combination creates a perfect balance of sweet, salty, and spicy.
This rub is specially designed for slow cooking : pulled pork , ribs , pork shoulder , and brisket . The sugar slowly caramelizes to form that crusty bark so prized by pitmasters. It also works on chicken , fries , and anything else that deserves a sweet and spicy touch. The 170g size allows for several smoking sessions.
Tip : Generously apply Carolina Dirt to your pork shoulder the day before, wrap in cling film, and refrigerate overnight. The next day, smoke at 110°C (230°F) for 10-12 hours for competition-worthy pulled pork.
About Carolina Dirt and Lillie's Q : The name " No. 16 " refers to 2016 , when this rub helped Chef Charlie McKenna win the Memphis in May World Championship with his pork shoulder. Lillie's Q , founded in honor of Grandma Lillie, carries on regional American BBQ traditions with gluten-free , dairy-free , and artificial preservative-free products. The "Dirt" refers to the characteristic earthy color of this rub once applied, creating that dark, flavorful crust emblematic of Carolina barbecue.
